One day I was reserching the information about El Salvador and found out that November 13 is Natioanal Pupusa Day in El Salvador. So I'm going to cook some. I took a day off at work on November 13 :)
PS: I have a question about pupusas with cheese. What kind of cheese is usually used? Thank you :)

I just have a question, is it white cheddar that she uses. and with the meat is it ok to chop it up in a food processor? thanks, also what other kind of cheese would be good for this? thanks
She used medium sharp cheddar and the yellow one, but I don't think the color matters. And about the meat ( I think you are talking about when it is already cooked) I guess it'll be fine to use the food processor. However it is pretty easy and fast to do it with your hands. I hope you are motivated enough to try to make the pupusas. Once cooked, they freeze well. All you have to do is put them in the microwave and they'll be like just done. Enjoy!!!

Also check your local "carneceria " or mexican market. They have 2lb bags of fresh masa already made for $2! It will taste better.
Also look up revueltas which is beans, pork and cheese pureed together and quesilla & loroco which are little pickled flower buds that are smiliar to ...uh, maybe like a relish.
Flatten it between a heavy plastic bag (like the ones bread comes in cut open on the sides).
Roll a ball, squash with coffee cup or large can. Press it flatter by hand, peel it off the plastic & fill it as full as you can & still close it. Pinch off excess masa, ball it up.
Put it back between the plastic & flatten with the can and mash it flatter by hand this time using the other hand to go around the outside and push the edges back to keep it round and the same thickness everywhere.

Why is she adding oil, shit my mom doesn't do that the cheese and meat will release its on oil that shit must be greasy thats why she is that size hahahahahahaha
I don't think she added any oil, only vinegar to the meat. The oil is to prevent the masa to stick to your hands. This is a very sweet lady and I enjoyed working with her.
