@ross939: you're right... you lose the smokey flavor when you use the plate setter. add in some wood chunks, or soaked wood chips and you'll get the that great smoked flavor.
I can say I'm not too crazy about the plate setter. I have pretty nice convection oven in my kitchen which does a fantastic job. But when I'm outside on the grill, I want the flavor of barbeque. In all honesty, a chicken cooked with the plate setter tastes a lot like a chicken cooked in the oven. A chicken cooked right over the open coals has a great smoked flavor, and the kamado design of the Egg keeps it very moist. Cook 'em over the coals, people, you will get far superior results.
