    The integrity of this recipe is spot on BUT there is a chemical reaction that happens when introducing alcohol to tomatoes. When you burn off the alcohol before-hand, you lose that flavor that occurs. The reason you use Vodka is because it is (supposedly) an odorless, flavorless alcoholic agent. Its not the flavor of the vodka, rather the chemical reaction that makes Vodka Sauce so special. I make it the same way other than that...Hit me back!!!

  • @LindzeeKeem vodka is available in smaller bottles, I'm sure you could get away with using those little party favor shooters, but as he points out in the video there are alcohol soluble flavors that are extracted from the tomatoes (and the rosemary I'm willing to bet) that come alive in the presence of the vodka; otherwise you'd just be making pancetta/bacon with tomato sauce

  • what you do is fry the bacon and add some vodka and wait till it simmers down then you add more vodka and cream and just as it's reducing add the sauce with more vodka in it and don't forget to add more vodka so theres some alcoholic substance left and it's not all cooked out :P

  • Why do you cook the alcohol out before you add the tomatoes? Shouldn't you add the vodka to the tomato sauce so it has more time to interact with the tomatoes?

  • You only use half a cup of Vodka. Does that flavor really enter the sauce, and make that much of a difference? For example, when you compare it to a regular, creamy tomato sauce, vs. this vodka sauce, does the vodka make that much of a difference? Also, does the Vodka brand matter in this recipe for taste? Thanks for the recipe though, looks awesome!

  • @SnazzSnzWarsaw actually yes the vodka adds a wonderful amount of flavor because the ingredients to the sauce (mainly the tomatoes) have flavors that can only be brought out by alcohol (alcohol soluble flavors) the same goes for any ingredients that you fry or saute for the fat soluble flavors. as far as brand ive seen no difference. try it and experiment, you will not be disapointed!

  • why do people always boil the pasta in salted water? is it for the taste or the heightened boiling point of the water?

  • It's purely for flavor. Don't let people lie to you about the temperature. In chemistry classes, they will tell you that adding solutes to a solvent will cause and increase in boiling point, which is true. However, a few tablespoons of salt will increase the boiling point of the water barely (about half a degree) - which is not significant at all. But it does taste wonderful with that salt.

  • Thats why you choose vodka over any other alcohol. Because it is tasteless it won't flavor the sauce and brings out the tomato flavors!
