I have been trying soo hard to do this at work.. but am yet to master it :( I have so far managed a couple of pitiful looking ones though lol. I think it's the control I'm lacking.
try with less milk as well, it gives you more control of the pitcher and the pour. if the crema and milk is brewed well there its just about the technique.
this is probably a noob question coming from an experienced barista. why do you pour the milk into another pitcher. is it to get rid of some of the foam? or does it make it easier to pour. i see it done a lot when making multiple drinks.
it is for both reason. one is to separate the foam evenly, so next drink won't be running out of the foam and there won't be too much foam in this one and just like you said it will be easier to pour with only half milk in the pitcher. hope it will be helpful.
thank you so much. i just made two caffè lattes for some friends that came over, and tried the two pitcher method. definitely gonna do that from now on.

how warm is the milk? the milk doesnt look too hot, i think if it,s too hot, then it wont work right?

skinny ones are better cause then you can do two. :) the more creme you can see the better.

ok I'm learning how to do this, but my fern/rosettas are kinda skinny, not as wide as yours...so what would I be doing wrong?

i have the same problem, i have slowed down my pour rate and wiggles, its helped, just remembering to do it everytime hasnt :-P

hey~ the trick is frothing silky milk and all the controls during the pouring. for an experienced barista, it can be sort of easy.
