The amount of sugar we used to can these peaches is the minimum for canning. Yes the sugar is what preserves them. If you want to use less sugar you might consider freezing or dehydrating. For freezing peaches:
Peal and slice 1 quart of peaches, add 1/3 cup sugar, and 2 teaspoons fruit fresh. Gently toss to coat, and let sit for 10 min, then put it in a freezer bag, seal and put in the freezer.

are there any alternatives to using so much sugar or is that the only thing that will help preserve fully?
