You need to first cook the eggs in very hot peanut oil or if you can't find it, use olive oil as any other oil ends up making everything too greasy. If you add raw eggs directly into the rice, it'll turn out to be a bowl of mush.

Enjoy with prawn crackers and maybe a couple of homemade spring rolls.
To all those who want to do this properly scramble the eggs (2-3) first in a very hot wok with a little ground nut oil for flavour, fry until fairly dry and transfer to a plate. Next add another 2 tbsp of oil to wok and fry chicken pieces (around 250g) until lightly browned all over (8-10 mins) then tranfer to same plate as cooked egg. I just made fried rice with a different recipe last night. If there's two things i learned is to use LONG grain rice or jasmine rice and also to cook the egg first or cook it after adding the veggies. Then you add the rice. Otherwise it's mushy...
