  • Chef John, I made the Carolina BBQ, but I cheated, I used some leftover fruit cocktail but used all the rest of the ingredients you sited. Tomorrow I'm going to cook the meat, I cheated again...my bad, I am using boneless skinless chicken breasts instead of pork...the BBQ sauce is sssssspicy, and yummy!

  • The USDA lowered is recommended temp on pork, it's ok lower than 150 now.

  • Want a great pork chop idea try this my own invention. Mix up BBQ sauce, orange juice, italian salid dressing, equal ammounts, and thin it out with an equal amount of water. Stab the shit out of the pork chops on both sides with a fork. If you have a crock pot great, if not like me cook them in a regular pot covered at a slow simmer for hours, the longer the better. They literally fall apart with just a fork. Serve them and the remaining sauce over a bed of rice and beans.

  • @billw23454 you can eat it. I wouldn't touch pink pork if you paid me. Not bashing the recipe, looks great but pork needs to be well done. You can still get tricinosis or a tapeworm. Red meat, beef, lamb, ect. I like rare, I'm not one of those where everything has to be well done. I'm sure pink pork tasts great but I don't trust it.

  • Mr Chef Have you ever tried cow's heart? If you haven't, you are missing out. Peruvian cuisine offers "anticuchos" that is basically marinated heart and cooked over a grill on skewers. You can find recipes online. The recipe is popular and I think you will enjoy it.
