Some of the cards have black edges and depending on there orientation they spell the names of the cards. Simple. All you need to do is memorize the different movements and you have your card names!

@samuelws1996 -- Trust me, this was on sale long before Penn and Teller saw it onstage. Look at the date of the movie posting: September 2007. Penn and Teller: Fool Us was filmed over 10 days in the summer of 2010 (Going by Penn's Penn Point on the pilot).

Theoretically, if Penn or Teller had bought the set sometime before Mathieu came onstage, they would have known the secret.
