Sea Kayaks are built for long trips. My longest was 15 days and I was entirely self contained with food and gear (water was naturally provided). You do need to pack carefully and choose compact gear but a kayak has a lot more room than a backpack and you don't have to carry it. The extra weight in the boat actually makes it more stable, though a little slower.
How well does a kayak function while carrying food and equipment for a long trip like this? When I look at them, I can't picture them carrying adequate supplies.
