The book might be ok, I guess. I haven't read it. But making a film will produce another Twilight phenomenon, just with zombies instead. It's pop culture, it can be adpated depending on one's point of view! Alright. But giving feelings to zombies (definition: walking DEAD, moving CORPSES, etc.), giving them humanity is throwing the horror element away. Vampires always had a sensual, romantic element, but come on, zombies?! I won't be able to take this...

i thought a zombie love story was a bad idea when i thought about it. zombies are supposed to be brainless, etc. it's just not right. but then i read the short story this was based on and then it made sense. seems like it would be loads better than twilight. this seems a lot more complex, somehow. anyway, it's different. i've always been more into zombies than vampires anyway.
You said it yourself: "I want my heart to beat" This implies you also don't have any brain waves since a brain requires a fresh supply of oxygen.
At least an "infected zombie" is still alive and may retain part of the human psyche. You shot yourself in the foot and I look forward to seeing you explain this in your book.
The idea of zombies being just living humans with a rabies-like disease is a recent (and boring) branch of the mythology. The "classical" zombie is a more mysterious creature that's reanimated by magic or cosmic rays or some other unknown forces. We're talking about a walking corpse, here--applying standard medical brain science isn't going to get you far.

If you really want to apply "logic" to a supernatural creature, I could point to the fact that modern scientists still have practically no idea how the brain works or how it stores information. The idea here is that zombies stay "alive" by absorbing human life energy (electrical) when they eat them, which keeps their brains functioning on a low level, although none of them have any real memories.

It gets against all the principles that George Romero invented, 42 YEARS AGO!, IN NIGHT OF THE LIVING DEAD(1968).
I respect you and your film, but that isn't a zombie film, like Twilight isn't a true vampire/werewolf film.
