I think that we'd get more knowledge of why that guy is standing there if we saw the whole show, because I don't think that's all of it.
This bit, however, highlights the amazing flexibility of a talented contortionist, but as one person has already said, the camera movement and angles take away from the interesting bits.
the guy is a spotter to make sure she doesnt fall and if she happens to, then he will catch her. even if she's a trained professional, mistakes can take place
She looks comfortable when she does that stuff!!!

The contortionist is beautiful and very flexible.
But the guy watching her is disturbing the show.
Due to the constant movement of the camera and the editing we miss the most interesting parts of what the contortionist is doing.
