hi it looks like your dog bone mount on the bottom of the engine is worn , search google for jetta dog bone mount , all you will need is the new bushes, you can do it yourself if you are at all mechanically minded,

Why is that engine flexing so much? Are the motor mounts shot? Did somebody do a bunch of 4,000 RPM clutch dumps or something?

That's the way stock engine mounts are.
