coconut milk has saturated fat but is the medium chain fatty acid variety which is actually good for you and doesn't make you fat...the saturated fat in the corned beef however is another story.

The only reason it has a bad reputation is that it was used in the past as a source of lard, and bacon comes from pigs. Not all pork is bacon or lard. Eating chicken with the skin on will give you more fat than most cuts of pork.

Part of the cooking in the danger zone series was the LOCATIONS he was cooking in not just the food. I would resume with these episodes that the location was more of an issue.
Maybe the danger in this food is all the fat. Taro leaves are nasty if you don't cook them for long enough. They have raphides - needle-like crystals of calcium oxalate- that are extremely painful when eaten (trust me, I've had it). Cooking destroys the raphides, but you really have to boil it to death.
how is taro root and coconut in the "danger zone"? they're not foods that are really considered "taboo" or generally displeasing to the Western culture. A lot of people probably haven't even heard of "taro" or even know what a coconust looks like before being hacked at.
