You're quite wrong on this one, I fear. An x-ray tube uses an anode made of wolfram (W), which absorbs the kinetic energy of the electrons and eventually transmits part of this energy in the form of x-rays. The tube the teacher in this video is using is a normal accelerator, just like the ones in the old televisions and in oscilloscopes.
I believe there is an extremely small amount of gas under low pressure in the tube, not "no gas". The reason why there is a beam, is because there is a small amount of gas with electrons that are fluorescing, right?
I agree with you, there must be some gas under low pressure in the tube. Otherwise you wouldn't see the beam of electrons until they'd hit the wall of the tube, because they can't interact with particles when there is a vacuum in the tube. Electrons are mostly made visible with hydrogen under low pressure. The color of the beam seems to point to hydrogen as well, for it has a major spectral line at 486 nanometers, which is the wavelength of some blue- greenish color.
Correct me if I'm wrong here, but Quark is the smallest thing?
