Theres a mineral called Cortosis which is lightsaber resistant, the empire had armour made for Shadow troopers, and Reborn Jedi, quite some time after ep 6 if you play the game Jedi Knight 2: Jedi Outcast i explains it all.
I swear the star wars prequel trilogy needs a reboot, it had such potential.
