You can make plain meringues without any almond, just egg and caster (or "superfine) sugar. They might not hold up quite as well with the ganache in the middles, but it wouldn't hurt to try :) Good luck!

@therachaelite some varieties of greaseproof paper won't work. You're best to use "baking paper" or "silicon paper" if you don't have the mats.
