@attybong Yes, probably the best "party" dish ever--cheap, quick to make in quantity. Basically, rice, seasonings, (onion, celery, bell pepper, sometimes tomato) with spices and various meats--ham, sausage, shrhimp, etc, all or morel likely one or two, cooked with rice. Marvelous; one of the great dishes of Louisiana. Of course, crawfish pie is also a cajun dish--basically shelled c=fish meat in a sauce baked in a pastry shell, wonderful, as is file(sassafras) gumbo.

Nothing compares to cajun food. Have an italian mom (as I did) from Baton Rouge, get the recipe for lasgna with crawfish. You'll be in heaven.

And "Po-Boys". Named after the striking New Orleans street car workers. Fried oysters in a french roll. Delicious.

Earliest Hot Band footage I've seen. Heard several concerts from this period, all of it fine and energetic, but this is about as good as it gets. This was the set closer for several years, Albert and, (later) Frank always made the most of it. Don't make me choose! Hank DeVito sounds great here as well.
