Good idea, well done, except that it surprised me that you don't use a lovely big cast iron skillet.

Non-stick is for frightened people who wash pans too much with awful detergents. There are also ways it can go toxic.

I call what you started with, my dog's favourite, my favourite, a "yam". We can't grow them this far north. In spite of trying to eat local, we stray and pig on several big ones a week.

This recipe is how to eat fewer for as much fun.

You must have grannies and aunties etc who used nothing but cast iron skillets, and the curing and care of these treasures might well be one of your cooking shows.

They are flying out of garbage dumps and thrift shops and they are the only way to cook. The time for non-stick is yesterday.
