Post production. You basically tell the computer to cover anything that is "Green" to instead be a picture.

There is also equipment that lets you do the same thing live.

you just use a color key or something that keys out the green and then put a picture or a video under the first layer of the person on the green screen and it replaces it. ( I use after effects)
