Also, beef needs to be seasoned before rolling up.

It's also best to find the perfect cuts of beef. Don't rely on your local supermarket for quality. The cows they get their meat from weren't butchered early enough.

You want the meat to be very red, moist. This way, you know the meat won't be tough after searing and boiling. Fat marbling is ok but not too much or else they'll shrink tremendously during cooking.

Haha, rouladen. Cute but no.

Thin, tender slice beef, rolled with sliced ham (we like using sahlen's over here in the states) and a few slices of german barrel pickles (we slice one pickle into about four or five slices) and my mom adds a twist by putting a generous strip of french's honey dijon.

This is then secured with toothpicks and pan seared to seal in flavor before removing to brown onions then we add it in again, add the gravy and let those babies boil til the gravy's ready.

In P.E. one year in high school, we had a few weeks of playing horseshoes. During the last "lesson" we all walked across the street to the local restaurant and got horseshoes to eat. Gotta love small town central IL.

The Field House took the horseshoe and deep fried it. They take the meat of your choice, chopped up fries and toast chunks, wrap it in a tortilla and deep dry it. They it gets covered in cheese sauce. It's called the Burrito Shoe.

Me and my wife ate there last year when we took a weekend trip to Springfield, I got the giant pancake, absolutley delicious but couldn't finish it but I did eat more than half of it and boy was I full after.

@rockerjp101 I doubt you will find a place that serves horseshoes in cali. I grew up in a small town right outside of Springfield (Chatham, also has really good horseshoes) and I go to school in Missouri and literally almost no one outside of Sangamon County has heard of them.

If you are ever in Springfield and want a great Horseshoe, try D'arcy's Pint (not too far from Charlie Parker's) or Mike and John's (a Godfather's franchise formerly the Red Coach Inn). There's also a little place called Jungle Jim's on N Peoria Road that makes a great shoe and some kille biscuits n gravy. My favorate at Charlie Parker's is the chocolate chip pancake. Oh, and Brenda's husband, Kim, is a great has a great autobody shop nearby too. - I think the Shirleys have sold the cafe though
