She doesn't do it right.. you make a crumb coat, chill the cake, then pipe on thick lines of frosting and smooth them down with a pastry spatula dipped in warm water to make it all smooth and pretty. but with my method, you don't really need a crumb coat.. trust me 30 10th graders could ice a cake my way and not have crumbs in the icing even with a chocolate cake.
Haha, some people are pro at icing cakes they don't need to use the first step. Also, without the crumbs. You can't be rough with the cake, that's why it's so spotty.
It doesn't matter how the pros do it, my mother frosts cakes all the time, and she never uses a crumb coat. They turn out perfectly fine, and they sell. Instead of using a crumb coat, the cake is cold, and she's delicate with it.
Or you can be gentle after waiting until it's completely cooled and not as many crumbs come off. Or Apply the frosting in thick even layers/swipes, instead of thin ones that have you scraping cake instead of puttin on frostin.
you can also dip the spatula [or whatever you're using to frost it] in hot water, it makes sure the frosting won't hold on to the utensil as much and goes on much more smoothly.

OR you can just freeze the cake for about half an hour and THEN frost it. that works too

it also really depends on the quality of the cake itself, a dry cake=more crumbs thus more likely to be dirty looking and just not so delicious.
