I have been one of two working in a small butcher shop and we take a whole boar and break it down, cut it and wrap it in foam trays sealed with plastic wrap(double wrap) like a steak in the super market in 15-18 minutes. We even grind in that time unless we make sausage that takes a little longer. That looks nice I hope you don't ever hit yourself, and I too would like eggs and bacon with a side of sausage. Nice!
