Yikes! Major canning fail. I think you used a hot-water bath instead of a pressure canner. Also, from the look of it, you tried to can refried beans? Major no-no. Never can anything that is thick like that. Instead, can the unmashed beans, then mash them up before you use them.

I just read all the comments. It was a food spread called Zacuscă for eating like salsa or jam. Zacuscă contains eggplant, cooked beans and roasted peppers - VERY DANGEROUS to can because they are low acid foods. Can vegetables and meats under pressure ONLY. Boiling alone kills bacteria but spores of Clostridium Botulinum can survive and grow inside the jar.
RULE: If Lid is popped UP, don't eat! Don't give it away either - geesh!
Glad I was on this side of the smell. Looks like they just stuffed stuff in jars and put the lids on. If they had done this propperly, the stuff inside the joars would have been Pasturized.
In case you haven't done so already... (I realize this video is quite old.) You should take the time to sterilize your entire kitchen from the ceiling down. I'm talking Hot bleach water and a tooth brush here. Wear protective gloves and a dust mask... which you will discard when done.
100 years ago today, barefoot illiterate housewives canned similar food with a 100% success rate.
This was after they grew, cultivated, harvested and prepared the vegetables. Then chop wood to fire the stove on a mabe hot autum day. Now they are ready to cook and can with a 100% success rate.

I know it seems hard to throw the jars away without opening, but when you consider the cost of replacing jars, to the possible long term health problems or even fatality, it doesn't even compare. @jleedill@mkmason2002 Not really. There is nothing wrong with the glass just dump it rinse it then sanitize it. Botulism is probably one of the most comon deadly problems yet the spores are quite abundant in the soils most our root crops grow in. If you are experienced or educated in food preservation you would know that there is no reason not to reuse this glass. The processing is all that prevents the same thing from happening to virtually every thing you put in a jar.

The lids are made so that they will pop up when the seal has been broken, or the contents have turned.......So if the center of the lid is popped up like a tamper-proof lid, then either the vacuum seal is broken or the contents are rotting. You don't want to be anywhere near them when they explode, either......Worst smell ever.

Canning is not easy! The first go round for me ended up similiar to this vid. That is why it is important to try this when you are not in a shtf situation, that way you can learn from your mistakes:)

Don't EVER just bath-wash canning meat. ALWAYS pressure preserve and follow USDA recommendations to the letter. Do not rush the process, or else THIS shit happens.
I can relate to this video. When I was a teenager living at home, I used to love gardening. One year I decided I wanted to canning with the vegables from the garden. I thought all went well. But about 7 months later I notice the coloring of the food was fading. I open the jar as if I was going to eat it. The pressure was so great that it splattered all over me. Well I tried really hard to keep from throwing up, it was awful. Now I am 48 and it has damage me. LOL - I’ll try again soon.

@Ballofuentes wow, kind of reminds me of a gift my wife got of canned chocolate sauce that we found out got moldy :( except there was no explosive opening. It also reminds me of some instant miso soup I had. It didn't taste good and I set it down. Latter it ended up bubbling. Maybe it got some wild yeast or something, but it was really weird.

a couple of weeks ago they found some canned mushrooms in my town in a old earth seller. They where canned in 1945 so they sent them to a lab to see if they sill where edible. they where fine ^^
These foolish people are touching these jars which holds billion of dangerous bacteria and they place these bacteria laden jars in the sink where they put clean dishes.
In all seriousness, if you knew ahead of time that they were bad, you would've been better off just throwing the jars out. Considering it likely contains the botulinin toxin, you're now going to have to STERILZE everything that food came into contact with. Jars, sink, etc. and TOSSING any towels or sponges. Also, you're really supposed to cook any jars you KNOW are bad FIRST in boling water for a half hour to kill the bacteria before tossing it, lest it come into contact with people or animals.
Improper processing of the food, and canning of the actual food itself. Always follow the directions exactly when you are canning and you won't have any problems like this.
I have been canning for many many years, and this has never happened to me.
anyone who wants to know more about home-canning may also find the book "Canning & Preserving for Dummies" useful. it teaches how to make your own jams and jellies, canned veggies, and dried snacks. How to tell the acidity level of the food pick etc

I don't really know. These were gifts and I don't know the conditions under which they were made. But . . . I can guess!!

It was a gift of Zacuscă. Wikipedia says the main ingredients are roasted eggplant or cooked beans, roasted red peppers and chopped onion.

In all seriousness, if you knew ahead of time that they were bad, you would've been better off just throwing the jars out. Considering it likely contains the botulinin toxin, you're now going to have to STERILZE everything that food came into contact with. Jars, sink, etc. and TOSSING any towels or sponges. Also, you're really supposed to cook any jars you KNOW are bad FIRST in boling water for a half hour to kill the bacteria before tossing it, lest it come into contact with people or animals.

Improper processing of the food, and canning of the actual food itself. Always follow the directions exactly when you are canning and you won't have any problems like this.
I have been canning for many many years, and this has never happened to me.

anyone who wants to know more about home-canning may also find the book "Canning & Preserving for Dummies" useful. it teaches how to make your own jams and jellies, canned veggies, and dried snacks. How to tell the acidity level of the food pick etc
