i just did this, like 3 hrs ago, knife down the top and through the front, just like he did. am about 90% sure it wasn't dead. for like 10 min it still moved, it clamped down when i stimulated the crusher claw. then i removed the tail, and put it on the steamer dish and over the pan and it tried to escape, like tried to move out of the pan. not sure what's going on, but no way this thing could have been dead
@bruschj Been looking at this OOI. The lobster has several nerve centres down its back. The way shown here will only destroy some of them. The front couple are the most developed. The final cut recommendation is to repeat the process down the back, in the other direction, as well. Is there any actual "pain"? There are many conflicting studies (many probably subsidised by interested parties). But while ewe don;t know I guess it's nice to be sure. Put in cold salty water with ice 20 mins
@bruschj more. Also you have to be dead centre to make sure you actually do cut the nerve centres. To be blunt, the surest way to handle the front end (but shocking and brutal and also very brownly messy)) would be to use a meat tenderising hammer or a piece of 4x2 and _really_ smash the whole front end. :( I mean _really_. Te last way you should ever cut BTW is across the head. A normally brained animal may suffer little from this (we hope) but the lobster's layout is different.
thats funny cause he didnt drain the urine from the lobster, chinese stick a chopstick up its piss hole, that not only drains the unrine from the lobster but also kills it very quickly.. so funny how a big chef doesnt even know simply chinese cookery techniques that all chiense know... YOU NEED TO DRAIN THE UNRINE FROM THE LOBSTER, or do you like the taste?
@quickmantan I hope this is just a troll. Ever had a catheter? Ever had one with a sharp stick? For all I know I may like the taste of lobster urine! It may just be part of the taste. It may just be purged or neutralise during cooking....etc. Anyway you could probably do that after killing, before cooking. BTW, Chinese cooking is not all cooking. And what you suggest is probably cruel.
and some fish, the nerves and joints react to the salt or soy sauce (which has salt) or other chemicals and potent seasoning. this results in jumping tentacles, spasming muscles, opening mouth, moving claws etc. But always always freeze ur seafood. It keeps in fresh whilst u boil the pot/pan.
(human's have 100 BILLION) so no. they are not going to die so much as badly n horrifically as we would or any mammal. Also, when u salt an octopus (raw but dead) frog's legs (if u have seen the dancing frogs leggs while salted video on youtube)
Okay, Humane way to cook lobster is to put it in the freezer. lobster does not have brains but has neurons in the nervous system (spine). when freezing the lobster (or most spinal seafood/creatures without a brain) the nerves "go to sleep" and then cutting the spine (preferable after 10 mins) will surely damage the 100,000 neurons.
This method does in fact kill the lobster quickly and humanely because the movements that it makes afterward are small motions and only muscle contraction, which is consistent with involuntary local reflexes of the peripheral nervous system, as opposed to the rapidly alternating muscle relaxation and contraction as it twitches, flops and writhes while experiencing distress, as it does when boiled. The Crustastun minimizes pain as much as possible, but will not likely see widespread adoption.
@koolkeaveney blunt knife? Also you need to stab first, then twist the knife down, not just cut. That provides a far sharper cut at first, the gradually tears the shell, rather than trying to split it all at once.
Thanks for at least showing that boiling is very very harsh and painful! But actually it is NOT THE MOST HUMANE WAY...
THERE IS A MACHINE CALLED CRUSTASTUN WHICH KILLS THEM IN 5 SECONDS WITHOUT PAIN WITH ELECTRO-STUNNING!
WATCH MY VIDEO ON MY CHANNEL AND DO NOT CONTINUE WITH THIS WAY OF KILLING THE LITTLE ANIMAL AGAIN...(QUEEN UNI. BELFAST HAS ALREADY PUBLISHED THE SCIENTIFIC RESEARCH RESULTS! (2009) )
@jaydaelbertstein Why would a restaurant spend the money, I assume these machines are not cheap, not to mention valuable space in the kitchen when a simple knife does the trick. It doesn't take 5 seconds when you consider the preparation to put the lobsters in the machines. A busy restaurant will not have time for that. The method shown by Ripert is painless and instant and is actually quicker and more efficient that your machine...AND LESS EXPENSIVE.
Lobster, you are being tried for crimes against humanity. Your punishment is execution by knife infront of a public audience that will be brought to the viewers of Youtube. Any last words?
There is the slight and fleeting pain of the initial incision, but no residual pain, as it has died. The remainder of movement is purely nervous system residual movement. No sensation after that.
Sorry but they are just like cockroaches and those things do not feel pain or have emotions, do you care when fly is squashed or when you slap a mosqitoe? only ignorent people think that boiling a cockroach and killing it in 3 seconds is inhumane because they are not very smart.
@TheZipix I mean, dont get me wrong. I dont agree with the way I have
seen some animals slaughtered...but its a food chain. Animals do it to each other. But I have seen some nasty treatment in slaughter houses done on purpose by mean rednecks
I believe Anthony Bourdain said that they're just giant insects and just to throw them in the boiling water on an episode of No Reservations. Perhaps that's just demonstrates the different personalities of these divine chefs!
Sadly, this is not painless at all, boiling is more humane than this since after a few seconds the lobster passes out. however here the lobster is still alive since the brain works in a more advanced way than ours. slicing it in half wont immediately kill it, just git it a horrible slow death.
this is the best way to prepare lobster. boiling, as he said, is one way.. but you do not always have the best outcome with its meat. this method you can actually take the raw lobster and prepare it any way you like. ripert shows great homage for the lobster. it gives its life so we can enjoy it.
Great chef, but c'mon, it's a giant insect, just toss it in the boiling water. We don't even give chickens or steer this kind of care. Perhaps Monsieur Ripert should volunteer to teach African lions how to kill gazelles more humanely. ;-)
I kind of feel sad for seafood and animals. But they are so darn good and we have to survive! It's like our food is like "What did we ever do to you!? we dont kill and eat you!" LOL.
Many people stab the lobster into the brain, in the belief that this will stop suffering. However, a lobster's brain operates off not one but several ganglia and disabling only the frontal ganglion does not usually result in death or unconsciousnes.
-lol your right, thats why he kills himself very human and painless by a shot in the head. LOL he just knows hes an animal. And knowing that he makes the right decission - to kill himself in a human way..
@wehrmacht132 Yeah, the thing is that's one of those internet urban legends. They say he made it illegal in The Enabling Act of 1933, but that's simply not true. But people like you pass it around as if it's a fact.
haha i love when he is talking the lobster is trying to pinch him, seriously, this makes no diffrence if you boil him, they have no nervous system, and they cant feel pain.. Just the site of it is kinda bad i guess. Just like the movies. Viewer Discretion is advised!

Lobsters are the bugs of a sea. killing a lobster is like killing a cockroach in your house. only they taste good. But who cares how you kill east coast lobster because they taste really bad compared to California spiny lobster.
Ripert pays tribute to the lobster here in ending its life in a dignified fashion, as chefs, we live off the other creatures, its only fitting to try do pay our respects to the animals that allow us to make a living.
This goes as well for all items and animals we cook with, I belive that the way we treat and respect the items use translates to the final product.
Because severing the nervous system means there is no feeling. It's like when a spine is snapped, you instantly lose all feeling and control of limbs below the break.
It was. Even though the functioning of the brain and subsequently its life were ended near instantly, it still died with the last instinct being to crawl away. It's like chickens when they continue to run around after their heads are taken off. Hell even humans do it if killed precisely and quickly enough (ie a guillotine).
Lobsters eat shit off the ocean floor, literally shit.
They taste much the same as what they them selves eat, like shit.Never liked em.
You kill a lobster the same way you can kill a frog, put him in a pot of cold water and turn up the heat gradually, it wont even know its being cooked, it will pass out first before it becomes boiled, much the same as being in a hot bath or jacuzzi.
The chef is correct about killing the lobster with a knife first. This cuts down on thrashing with could cause burns from the splashing water. Also, less trashing = more tender meat.
Boiling a lobster to death is not the ideal way to get the best out of this expensive treat. It is better to only boil for a minute, then plunge into a an ice bath. From there, you can grill or broil the lobster, which gives it a much better flavor.
This comment has received too many negative votesshow
any of you retards that say killing them humanely is beter are stupid as fuck. just kill them they are food and no mater how you do it they are going to die. thats humane? fucking stupid hippies.
Why is it stupid to want to inflict the least amount of suffering when killing the animals you eat? Should we enjoy watching our food squirm and laugh sadistically while they die slowly? Yeah, no thanks.
you poor unhappy soul - your feelings of anger and your lack of compassion are actually a reflection of how you feel about yourself - you obviously despise yourself deeply.
Wow....Learn before you speak. Lobsters can survive up to 4 days out of water in cool temperatures and up to one day in just regular temperatures. So no it's not SUFFOCATING. And that is world famous eric ripert and he knows a thing or two about cooking. That is the most humane way to kill a lobster so stfu
You're talking about one of the most sophisticated cooks in the world.
He is demonstrating the fastest way to kill the lobster, he also says it's unpleasant however.
There is no excuse that it is hunamely 100%
If you got more education on lobsters you would have known that a lobster can survive on land about 3-7 days if it's moist and cold. I think it is not suffcatting in those five minutes.
what about killing cattle humanely? and how ethical is foie gras? come on people. way too fuckin sensitive. food is food. eat it and enjoy and don't harp on ethics.
No one seems to be bitching about putting a pig on a hook and then slitting its throat to drain the blood. People just like to experience the rush of being high and mighty because their repetitive, sheeple lives suck so badly.
cockroaches are probably smarter, they run away. but yet we mercilessly kill them. i say treat them equally. thats why i go hunting for lobsters every summer.
Myriapoda is a sub phylum of arthropods containing millipedes, centipedes, and others. The group contains 13,000 species, all of which are TERRESTRIAL
I like lobster meat alot, but I feel sorry for the little bastards, I used to fish for them alot as a child, then bring one or two home when I'd catch them and put them in a fishtank. The longest one lasted me for a couple of months, but they're tough to feed. They only like raw tenderized chicken breast that's gone bad. Anyways, kudos for the chef guy for showing people how to spare the lobsters from pain.
The lobster is out of water the whole time he's talking. This is definitely better than throwing it in a boiling pot, but he can do better, right? Good post, though (sorry to split hairs).

I'll eat the hell out of a lobster
Iamyurdaddy 2 years ago
Lobsters eat shit off the ocean floor, literally shit.
They taste much the same as what they them selves eat, like shit.Never liked em.
You kill a lobster the same way you can kill a frog, put him in a pot of cold water and turn up the heat gradually, it wont even know its being cooked, it will pass out first before it becomes boiled, much the same as being in a hot bath or jacuzzi.
Or a big knife will do the same i suppose :P
SaveOurSovereignty3 2 years ago
Agreed. Another good way to do it, plus easier for the squeamish. As far as the lobster knows he's just taking a nap.
Nateb123 2 years ago
The chef is correct about killing the lobster with a knife first. This cuts down on thrashing with could cause burns from the splashing water. Also, less trashing = more tender meat.
Boiling a lobster to death is not the ideal way to get the best out of this expensive treat. It is better to only boil for a minute, then plunge into a an ice bath. From there, you can grill or broil the lobster, which gives it a much better flavor.

Were the lobster's legs....still moving.....? Not that I'm siding with the lobster, I just thought it was kind of neat.

any of you retards that say killing them humanely is beter are stupid as fuck. just kill them they are food and no mater how you do it they are going to die. thats humane? fucking stupid hippies.
Kellyrt 2 years ago
Why is it stupid to want to inflict the least amount of suffering when killing the animals you eat? Should we enjoy watching our food squirm and laugh sadistically while they die slowly? Yeah, no thanks.

you poor unhappy soul - your feelings of anger and your lack of compassion are actually a reflection of how you feel about yourself - you obviously despise yourself deeply.

Ripert is fantastic and I loved the lobster dish I had ad Le Bernardin in May! No doubt he respects the animals he serves.

Wow what a retard? Humanely...YEAH RIGHT!
The lobster is 5 minutes sufficating because it's not in the water en then he kills it humanely!?
This guy is not a butcher he only needs to prepare the food and shut up!
jordanpower111 2 years ago
Wow....Learn before you speak. Lobsters can survive up to 4 days out of water in cool temperatures and up to one day in just regular temperatures. So no it's not SUFFOCATING. And that is world famous eric ripert and he knows a thing or two about cooking. That is the most humane way to kill a lobster so stfu
honest1 2 years ago 4
You're talking about one of the most sophisticated cooks in the world.
He is demonstrating the fastest way to kill the lobster, he also says it's unpleasant however.
There is no excuse that it is hunamely 100%
If you got more education on lobsters you would have known that a lobster can survive on land about 3-7 days if it's moist and cold. I think it is not suffcatting in those five minutes.
Who is the retard really?

No one seems to be bitching about putting a pig on a hook and then slitting its throat to drain the blood. People just like to experience the rush of being high and mighty because their repetitive, sheeple lives suck so badly.
Nateb123 2 years ago
Before anyone thumbs downs this, look up methods on slaughtering pigs. It's far less humane than this method.

We use them for food, might as well treat them with respect eh? Or is that too humane for your barbaric nature?

lobster is in the same class as cockroaches so dont feel bad
NutWarrior 2 years ago
cockroaches are probably smarter, they run away. but yet we mercilessly kill them. i say treat them equally. thats why i go hunting for lobsters every summer.

Much respect to the Gentleman Chef, it's a respectful way to end a creature's life with care and honor.

Even if its moves afterwards, its still dead. Its just random neurons firing off after the destruction of the nervous system.

the splitting of the head might allow for better seepage of juices while boiling to make a flavorful stock ! :)

Very nice post. There is no reason to make the lobster feel more pain than necessary.

The lobster is out of water the whole time he's talking. This is definitely better than throwing it in a boiling pot, but he can do better, right? Good post, though (sorry to split hairs).
