  • i just did this, like 3 hrs ago, knife down the top and through the front, just like he did. am about 90% sure it wasn't dead. for like 10 min it still moved, it clamped down when i stimulated the crusher claw. then i removed the tail, and put it on the steamer dish and over the pan and it tried to escape, like tried to move out of the pan. not sure what's going on, but no way this thing could have been dead

  • @bruschj Been looking at this OOI. The lobster has several nerve centres down its back.The way shown here will only destroy some of them. The front couple are the most developed. The final cut recommendation is to repeat the process down the back, in the other direction, as well. Is there any actual "pain"? There are many conflicting studies (many probably subsidised by interested parties). But while ewe don;t know I guess it's nice to be sure. Put in cold salty water with ice 20 mins

  • @bruschj more. Also you have to be dead centre to make sure you actually do cut the nerve centres. To be blunt, the surest way to handle the front end (but shocking and brutal and also very brownly messy)) would be to use a meat tenderising hammer or a piece of 4x2 and _really_ smash the whole front end. :( I mean _really_. Te last way you should ever cut BTW is across the head. A normally brained animal may suffer little from this (we hope) but the lobster's layout is different.

It may just be purged or neutralise during cooking....etc. Anyway you could probably do that after killing, before cooking. BTW, Chinese cooking is not all cooking. And what you suggest is probably cruel.

  • Okay, Humane way to cook lobster is to put it in the freezer. lobster does not have brains but has neurons in the nervous system (spine). when freezing the lobster (or most spinal seafood/creatures without a brain) the nerves "go to sleep" and then cutting the spine (preferable after 10 mins) will surely damage the 100,000 neurons.

  • This method does in fact kill the lobster quickly and humanely because the movements that it makes afterward are small motions and only muscle contraction, which is consistent with involuntary local reflexes of the peripheral nervous system, as opposed to the rapidly alternating muscle relaxation and contraction as it twitches, flops and writhes while experiencing distress, as it does when boiled. The Crustastun minimizes pain as much as possible, but will not likely see widespread adoption.

  • @koolkeaveney blunt knife? Also you need to stab first, then twist the knife down, not just cut. That provides a far sharper cut at first, the gradually tears the shell, rather than trying to split it all at once.

  • @jaydaelbertstein Why would a restaurant spend the money, I assume these machines are not cheap, not to mention valuable space in the kitchen when a simple knife does the trick. It doesn't take 5 seconds when you consider the preparation to put the lobsters in the machines. A busy restaurant will not have time for that. The method shown by Ripert is painless and instant and is actually quicker and more efficient that your machine...AND LESS EXPENSIVE.

  • There is the slight and fleeting pain of the initial incision, but no residual pain, as it has died. The remainder of movement is purely nervous system residual movement. No sensation after that.

  • Sadly, this is not painless at all,boiling is more humane than this since after a few seconds the lobster passes out. however here the lobster is still alive since the brain works in a more advanced way than ours. slicing it in half wont immediately kill it, just git it a horrible slow death.

  • this is the best way to prepare lobster. boiling, as he said, is one way.. but you do not always have the best outcome with its meat. this method you can actually take the raw lobster and prepare it any way you like. ripert shows great homage for the lobster. it gives its life so we can enjoy it.

  • Many people stab the lobster into the brain, in the belief that this will stop suffering. However, a lobster's brain operates off not one but several ganglia and disabling only the frontal ganglion does not usually result in death or unconsciousnes.

    You kill a lobster the same way you can kill a frog, put him in a pot of cold water and turn up the heat gradually, it wont even know its being cooked, it will pass out first before it becomes boiled, much the same as being in a hot bath or jacuzzi.

    Or a big knife will do the same i suppose :P

  • The chef is correct about killing the lobster with a knife first. This cuts down on thrashing with could cause burns from the splashing water. Also, less trashing = more tender meat.

    Boiling a lobster to death is not the ideal way to get the best out of this expensive treat. It is better to only boil for a minute, then plunge into a an ice bath. From there, you can grill or broil the lobster, which gives it a much better flavor.

And that is world famous eric ripert and he knows a thing or two about cooking. That is the most humane way to kill a lobster so stfu

    If you got more education on lobsters you would have known that a lobster can survive on land about 3-7 days if it's moist and cold. I think it is not suffcatting in those five minutes.

  • I like lobster meat alot, but I feel sorry for the little bastards, I used to fish for them alot as a child, then bring one or two home when I'd catch them and put them in a fishtank. The longest one lasted me for a couple of months,but they're tough to feed. They only like raw tenderized chicken breast that's gone bad. Anyways, kudos for the chef guy for showing people how to spare the lobsters from pain.
