wow this is soo different ...its interesting cause my mum's egg curry is alot darker in colour and also she fries the whole egg in some oil jus lightly to make a ''skin'' around the egg.. gives the egg a crunch and then she adds the egg to the liquid bit.

this recipe is too good, the combination of coconut milk with tomato puree was truely fabulous. It does taste amazing. Dont mind the jobless and useless punks who posted useless comments. Its an amazing dish, my husband loved it too
This recipe was given to us by someone from the State of Kerala. They use a lot of Coconut Milk and to balance out the sourness from the tomatoes, the sugar is added.
Give it a shot and you'll be amazed by the flavors as were we:)

You can buy some cheese cloth from any American store, cut it into squares, put whole cloves and any other whole masalas/spices in it, tie it and make a little bundle and drop it in the gravy (not in the oil). Take out the bundle when you are ready to serve:)
Other option is to make a powder of the cloves so you don't bite into it.
A little bit of sugar brings out the natural sweetness of the coconut milk. Many dishes work well with the balanced flavors of sweetness, saltiness, and tartness (holy trinity, some call it). Of course, it is a personal preference, so you are free to leave it out.

this is not classic egg curry , its a punjabi dish ,this a south indian style and punjabi food is devoid of cocunut, the original recipe just uses garam masala ,cumin and just haldi.

NO ....and nobody needs to prove anything , south indian dishes are all fish , curry leaves and coconut based for the most part . This is a CLASSIC PUNJABI/NORTH INDIAN DISH...if you have a problem with it ,go complain to amma..lol

@hotheadali : Yes, you can either use milk or cream. Be careful to not overcook/boil the cream or milk else it may separate.

@ramya2688 : Chicken Masala is not Non-Vegetarian - it is pure vegetarian and is fine for you to use. It is just a blend of spices.

'Curry' is a word we use for gravy...the combination of coconut milk and the masalas (spices) make the gravy/curry for this dish.
