I love his philosophy of "I don't care if you make mistakes, just know why you made them and don't make them again". As a young chef, that was something someone told me years ago, and I still give that advice all the time. I personally think that that is the best advise you can give someone learning to be a chef.
This interview was extremely insightful. You can tell that above all this guy just wants to cook great food. Being a korean-american myself its refreshing to see authentic humility coming from Chang. Above all he gets respect from his peers which is the true testament of whether or not you're the real deal.
His combination of French technique and Asian flavors is great. There is a reason his restaurants are always fucking packed. You might disagree with his temper or his philosophy, but you have to respect the vision. He is one of the best chefs in the US right now.
