@mhuertazayas I have never tried it with white sugar, but it might work. Actually, any of the chocolate frostings that I have in bettyskitchen that use unsweetened chocolate can be made by replacing the chocolate with cocoa powder.

If you're just looking for a cream chocolate icing, you can use Buttercream Frosting and add melted chocolate or cocoa powder.

I'd like to make something similar to chocolate covered butter creams only with chocolate centers and was wondering if your recipe would offer the right texture and consistency. @97WarriorGrad You have a great idea there! I have made this icing many times as fudge. For your purpose, you would need to beat the icing until it loses its gloss. Then you will need to quickly drop small balls of candy onto waxed paper. you may need to "round" them out for a nice shape before they cool and set up. It would be best if you had someone helping you do this. I think it will work great, and then you can easily coat them after they are set. Good luck!

@Michael9199 Hi! Thanks for your lovely comment! If I doubled the recipe, I would bring the mixture to a full rolling boil, and then I would just give it the 1 full minute of boiling. A little more would be okay, but 1 minute of boiling would have the same effect on any amount. You do have to beat this for awhile, and if it is not cooked long enough, it will not set up, so be sure it gets 1 full minute! Thanks for your great question!
As far as the sweetness, corn syup will be fine. The flavor will be a little different, and you may find that it is harder to get it to spreading consistency.
Thank u got getting back to me Betty. I have tried ur recipie and it was tasting really good. It was a bit runny though the first time- can u suggest what we can do then to bring it to a spreadable consistency? More doubts: (i) can we just melt the sugar, milk and butter and after the sugar melts can we add the cocoa so that the sugar doesnt remain granular. (ii) What happens when the stirring time you mention as 1 min is extended? Its a beautiful recipie. U are very kind to share it with us.
Thanks for your sweet comment! Yes, you can melt the sugar, milk, and butter, and then add the cocoa. The cooking time is 1 minute. You need to make this almost exactly 1 minute--don't extend it. If it is extended, the icing will set up fast and be sugary. If it is properly cooked, you may have to stir it for 10 minutes or so. You will know when to stop, because the look changes from shiny to dull. Then you spread your cake.
You rock, Betty! I made this frosting for a vanilla cake I made from scratch during a recent family gathering and their wasn't a crumb left. I even caught my nieces and little cousins dragging their fingers around the cake platter to scoop up any left over frosting that had been left behind during serving. I think a 13 x9 pan will be a little large for this small recipe. You can either double the recipe, or use an 8 x 8 pan or 9-inch round pie plate. I hope this helps!

Thanks so much for making this recipe..My aunt use to make it when i was little & I could not remember how she did it & always wanted that recipe, she use to let me scrape the pan & like u said it sets up like fudge and is soo good! Also she use to put a big dollup or 2 of crunchy peanut butter in it giving it that Reese's taste and after cooling a nice homemade yellow cake layer just pour it over the top and let drizzle down the sides and it seemed to harden like candy..yumm!--Angie
The peanut butter and spreading over the yellow cake sounds delicious! I will admit that this is one recipe I make over and over again--not for the icing so much as to pour in a pyrex dish and store in the freezer and get out a piece of frozen chocolate fudge to eat when I want something really rich! Thanks for all of your sweet compliments! This recipe is one of my very favorites. I have made it twice since making this video! I just pour it in a pie plate, refrigerate it, and the cut it into squares and eat it like fudge! It is great that way! I keep it frozen and eat it straight from the freezer--just a small piece or two at night! Caution: You have to beat this for awhile for it to start setting up, so don't give up--and once it starts to set up, you have to move fast! Good luck!

Yes, it is grainy--sugary. Actually, my whole family likes that about it. I made it just a week ago so we could eat it like fudge! But don't expect it to be silky smooth--it is grainy. Thanks for your question!

More doubts: (i) can we just melt the sugar, milk and butter and after the sugar melts can we add the cocoa so that the sugar doesnt remain granular. (ii) What happens when the stirring time you mention as 1 min is extended? Its a beautiful recipie. U are very kind to share it with us.

Thanks for your sweet comment! Yes, you can melt the sugar, milk, and butter, and then add the cocoa. The cooking time is 1 minute. You need to make this almost exactly 1 minute--don't extend it. If it is extended, the icing will set up fast and be sugary. If it is properly cooked, you may have to stir it for 10 minutes or so. You will know when to stop, because the look changes from shiny to dull. Then you spread your cake.

You rock, Betty! I made this frosting for a vanilla cake I made from scratch during a recent family gathering and their wasn't a crumb left. I even caught my nieces and little cousins dragging their fingers around the cake platter to scoop up any left over frosting that had been left behind during serving. I have always loved this recipe for icing--so much that I sometimes make it just for the icing and cut it into squares and eat it like fudge! It is such rich, dark chocolate! Thanks for your lovely comment and great feedback!

Hi Daniel,
I think a 13 x9 pan will be a little large for this small recipe. You can either double the recipe, or use an 8 x 8 pan or 9-inch round pie plate. I hope this helps!

Question - in the video you mentioned 4 teaspoons of cocoa powder and milk, but in the recipe it says to use tablespoons. Which is the correct measurement?

Hi Betty! Thanks so much for making this recipe..My aunt use to make it when i was little & I could not remember how she did it & always wanted that recipe, she use to let me scrape the pan & like u said it sets up like fudge and is soo good! Also she use to put a big dollup or 2 of crunchy peanut butter in it giving it that Reese's taste and after cooling a nice homemade yellow cake layer just pour it over the top and let drizzle down the sides and it seemed to harden like candy..yumm!--Angie

I will admit that this is one recipe I make over and over again--not for the icing so much as to pour in a pyrex dish and store in the freezer and get out a piece of frozen chocolate fudge to eat when I want something really rich! Thanks for all of your sweet compliments! This recipe is one of my very favorites. I have made it twice since making this video! I just pour it in a pie plate, refrigerate it, and the cut it into squares and eat it like fudge! It is great that way! I keep it frozen and eat it straight from the freezer--just a small piece or two at night! Caution: You have to beat this for awhile for it to start setting up, so don't give up--and once it starts to set up, you have to move fast! Good luck!

Yes, it is grainy--sugary. Actually, my whole family likes that about it. I made it just a week ago so we could eat it like fudge! But don't expect it to be silky smooth--it is grainy. Thanks for your question!
