  • @mhuertazayas I have never tried it with white sugar, but it might work. Actually, any of the chocolate frostings that I have in bettyskitchen that use unsweetened chocolate can be made by replacing the chocolate with cocoa powder.

  • @josephinemanabat It should not take long for the brown sugar to dissolve.  The tricky part is beating it and using it for icing while it is at a perfect consistency.

  • @AmielDionisio Yes, it sets up like a sugary fudge.  I love it, and I sometimes make it and pour it in a pan to harden, cut it into squares and eat it like fudge!

  • Betty, I made this recipe last night and I LOVE it! My boyfriend loved it too. I think I did end up mixing it too long, but I was still able to ice my cake. This icing is now one of my favorites and I will definitely be using it again!   • @durgaaa Whether baking powder or baking soda is used depends on the other ingredients in the recipe.The ultimate goal is to produce a tasty product with a pleasing texture. Baking soda is basic and will yield a bitter taste unless countered by the acidity of another ingredient, such as buttermilk.Baking powder contains both an acid and a base and has an overall neutral effect in terms of taste.Recipes that call for baking powder often call for other neutral-tasting ingredients, such as milk.

  • @bettyskitchen Thank you. I did make this and I tasted the soda in it. Why did this recipe call for soda? Was it because of the brown sugar versus powdered sugar? I don't understand what the soda did for this icing. Is there an icing which does not harden to very stiff like this one does? Thanks again, Betty.

  • @durgaaa You probably noticed that the icing bubbles up really fast after adding the soda, and it sets fairly quickly. If you prefer, you may substitute baking powder for a similar effect. If you're just looking for a cream chocolate icing, you can use Buttercream Frosting and add melted chocolate or cocoa powder.

  • @joshuacmex In this recipe you may use baking soda or baking powder. This creates a chemical reaction that is necessary for the icing to be beaten and to set up properly.

  • @bettyskitchen thanks betty am going to do that same cake on friday oh another thing remember the comment I put for the icing sugar u did for the haloween cupcakes I said that if it was really necessary to put powdered sugar remember well I found a really good video by NANCYTODAY you just put some normal sugar on the blender and put it on high and it will turn into icing sugar and it really works and it look and taste exsactly like icing sugar well i hope u use this tip for one of you videos.   • @joshuacmex That's interesting; I believe icing sugar also contains cornstarch to give it the consistency it needs. I will look it up.

  • @bettyskitchen thats right betty it contains cornstarch I recently bought some cornstarch the one I got its call maizena but its cornstarch I got it on a latin store you can buy it on a mexican or any latin store am going to try to add the cornstarch and see how it looks and taste on a cake oK...I will also make a video It will be a video respondes to your icing video a few days ago ok I'll post it tomorrow ok...

  • Betty, while giving the ingredients in your video, first you say 4 tablespoons of cocoa and then you say 4 teaspoons of cocoa. Which is it??? That will make a big difference. Please let me know because the recipe sounds delicious! Thanks!

    So few people even know about making chocolate icing with brown sugar, but that is how my Mama always made it. My children say it is better than any other chocolate icing they have ever tasted.

  • I accidentally used baking powder instead of baking soda. It came out all grainy. I ruined my cake, but I'll eat it anyway.

  • @AnotherCompartment I have used baking powder at times and baking soda at times. There's not a lot of difference. This icing is naturally "grainy," but the taste is wonderful.  It reminds me of chocolate fudge, and sometimes I make it just to cut it in squares and have it as candy.

    I know you said that this icing will harden up to a fudge-like consistency and on that note could I use this recipe (as a fudge-like filling) to make chocolate covered truffles? I'd like to make something similar to chocolate covered butter creams only with chocolate centers and was wondering if your recipe would offer the right texture and consistency. Any advice would be most appreciated. Thanks, you are aces!!!

  • @97WarriorGrad You have a great idea there! I have made this icing many times as fudge. For your purpose, you would need to beat the icing until it loses its gloss. Then you will need to quickly drop small balls of candy onto waxed paper. you may need to "round" them out for a nice shape before they cool and set up. It would be best if you had someone helping you do this. I think it will work great, and then you can easily coat them after they are set. Good luck!

  • Hi Betty! I love your videos soooo much! I've used a lot of your recipes. I love how they are "normal" recipes that everyone would enjoy. And you seem like such a nice lady. My great grandma made a fudge icing that looks very similar to this and she has passed away and no one in our family can seem to get it right. I'm anxious to try this. Would you extend the boiling time if you doubled the recipe? Thanks so much and God bless.

  • @Michael9199 Hi! Thanks for your lovely comment! If I doubled the recipe, I would bring the mixture to a full rolling boil, and then I would just give it the 1 full minute of boiling. A little more would be okay, but 1 minute of boiling would have the same effect on any amount. You do have to beat this for awhile, and if it is not cooked long enough, it will not set up, so be sure it gets 1 full minute! Thanks for your great question!

    As far as the sweetness, corn syup will be fine. The flavor will be a little different, and you may find that it is harder to get it to spreading consistency.

  • Thank u got getting back to me Betty. I have tried ur recipie and it was tasting really good. It was a bit runny though the first time- can u suggest what we can do then to bring it to a spreadable consistency? More doubts: (i) can we just melt the sugar, milk and butter and after the sugar melts can we add the cocoa so that the sugar doesnt remain granular. (ii) What happens when the stirring time you mention as 1 min is extended? Its a beautiful recipie. U are very kind to share it with us.

  • Thanks for your sweet comment! Yes, you can melt the sugar, milk, and butter, and then add the cocoa. The cooking time is 1 minute. You need to make this almost exactly 1 minute--don't extend it. If it is extended, the icing will set up fast and be sugary. If it is properly cooked, you may have to stir it for 10 minutes or so. You will know when to stop, because the look changes from shiny to dull.  Then you spread your cake.

  • You rock, Betty! I made this frosting for a vanilla cake I made from scratch during a recent family gathering and their wasn't a crumb left. I even caught my nieces and little cousins dragging their fingers around the cake platter to scoop up any left over frosting that had been left behind during serving.     I think a 13 x9 pan will be a little large for this small recipe. You can either double the recipe, or use an 8 x 8 pan or 9-inch round pie plate. I hope this helps!

    Question - in the video you mentioned 4 teaspoons of cocoa powder and milk, but in the recipe it says to use tablespoons. Which is the correct measurement?

Thanks so much for making this recipe..My aunt use to make it when i was little & I could not remember how she did it & always wanted that recipe, she use to let me scrape the pan & like u said it sets up like fudge and is soo good! Also she use to put a big dollup or 2 of crunchy peanut butter in it giving it that Reese's taste and after cooling a nice homemade yellow cake layer just pour it over the top and let drizzle down the sides and it seemed to harden like candy..yumm!--Angie

  • The peanut butter and spreading over the yellow cake sounds delicious! I will admit that this is one recipe I make over and over again--not for the icing so much as to pour in a pyrex dish and store in the freezer and get out a piece of frozen chocolate fudge to eat when I want something really rich!   • Thanks for all of your sweet compliments! This recipe is one of my very favorites. I have made it twice since making this video! I just pour it in a pie plate, refrigerate it, and the cut it into squares and eat it like fudge! It is great that way! I keep it frozen and eat it straight from the freezer--just a small piece or two at night! Caution: You have to beat this for awhile for it to start setting up, so don't give up--and once it starts to set up, you have to move fast! Good luck!

  • Yes, it is grainy--sugary. Actually, my whole family likes that about it. I made it just a week ago so we could eat it like fudge! But don't expect it to be silky smooth--it is grainy. Thanks for your question!
