    It reminds me a bit what i tried a while in Japan cause i couldn' remember the way to shape correctly the rice :)

  • It's good... Nigiri is really difficult. It needs a lot of care and practice...

  • Usually when you put the sushi rice on the seeweed paper, it will make the sheet go limp and soft and you should be able to roll it. If it isn't softening when the rice on top then there's something wrong with the type of sushi sheets you're buying. Hope I helped.

    if the rice is softening your seaweed almost immediately after contact.. there are two possible problems... first... your seaweed is too cheap... second, your rice is too wet (either w/ su or w/ water)

    i work w/ packs of 50 sheets of nori that are like $50 per pack. i believe it's from yamasho; chuuka grade. and it takes 'alot' to get the nori even moist from contact w/ rice.

  • do you knoe what they do to the seaweed so it doesn't break? cuz like seeweed comes hard right? and easy to break, i aunt told me to wet the seaweed, but how do i do it?

  • the seaweed should not be hard. what kind of seaweed are you buying? there's mannnny kinds.

    the type of sushi paper you're supposed to buy is nori. maybe you can ask if you can't read it. how did your sushi experience go? better? :)

  • Is there any way to prepare the fish? Or do you go all out raw? Cuz every time I buy Raw fish from my super market, it doesn't taste like what it does at a sushi restaurant.

  • generally it is all out raw, but yes, quality varies. hopefully soon we will be able to post a tutorial on how to choose fish for you, but for now you can either... 1) buy a whole fish and learn how to cut it (a bit hard); 2) pick non-fish varieties of nigiri, like the egg, vegetarian varieties, or cooked varieties, like crab & shrimp; 3) suffer with inferior fish :[

  • oooo...so hungry.... Thank's a bunch for putting this up! I really want to make sushi because I just bought a pretty bento on E-Bay, but I don't have a tatami (ou nuu!)The music in the background is hypnotizing!

  • :D a tatami is a mat that you put on the floor in eating areas. you can find "tatami rooms" in sushi bars where people take off their shoes and sit traditionally. i think a "makisu", or sushi rolling mat, is what you're thinking of :) good luck with your sushi-making!

    Usually you'd avoid jewelry, colgne, hairspray, when you make sushi.

  • that was not our decision; it was the chef's because this was filmed in his restaurant. he is one of the only chefs in washington state who is skilled and dedicated enough to obtain a license for serving the lethal fugu (blowfish); he knows what he is doing and does have a good reputation here. he rides a harley to work. he wears a watch. oh well. sushi shouldn't be touching your wrist anyway. :)

  • well ppl avoid watches, wrist bands, bracelets, etc. for sanitation perposes. Watches has been around in many public places, it's only common sense to remove such items during work. I own a sushibar myself, and that's how we and the health department roll here.

  • Wow, thanks. It looks so easy! Is it actually very hard to slice the sushi into sushi toppings? I'm making sushi for the first time in a few days. Is there anything really important i should know?

  • yes, slicing the fish is probably the hardest part, actually... we are trying to get around to making a video for that, so hopefully you can check back for when we do. :)
