It's Spanish tocino ibérico and it actually isn't that fatty, at least it doesn't render a lot of fat. It's used for cooking and isn't really meant to eat. It works great for this dish.
In Spain they just don't have a lot of greenhouse vegetables. Vegetables--some of them--don't grow here in the winter months. If you want to make a paella then you may have to settle for frozen vegetables. Frozen vegetables don't signify the end of the world in my book.

Here in Spain we have fewer options than the American cook. We use frozen vegetables in out Valencian paella. I can't imagine doing without them.

I tried this recipe last week, it worked perfectly..Maybe i used too much onions and too few thyme but otherwise it was awesome.
