I just made this dish per the Cookbook. He left out the part of boiling them for 6-8 minutes and then immersing them in ice cold water, before he places them in the EVOO and Garlic. They were Beautiful and DELICIOUS, I was scared at first, because they were different. Definitely a Different and wonderful taste. I gave my kids a taste test of them, ages 16 and 19 and they went back for a plate of them.
Mmmm.....recently got the cookbook (it's only $6 and change at Amazon!!!) I made this recipe just tonight. It was easy and tasty, and it didn't require the hours upon hours of cooking that my grandmother's collards always required.
My mom got me this book a couple of weeks ago and so far I'm quite impressed. Many of the recipes are fairly simple, easy to prepare, and don't require too many exotic ingredients (there are a few though, so you might have to make that trip to the berkeley bowl after all.) Most importantly, the food is excellent, and I highly recommend this book to vegans and non-vegans alike. I haven't tried this particular recipe yet, but you know I'm getting around to it! Keep up the good work, Bryant!
