Xao--heat with oil..oil coat is hydrophobic-co nghia la no giu nuoc cua rau cai hoac thit. Xao nhanh hon la chien...that mean it more raw than fried.
I think they boil the noodle not with water but soup based to save water. Xao have higher heat than boil, right?

I think nuoc tuong is soy sauce (xi dau). Hoisin sauce is " tuong den" in vietnamese
