Lucas complains about the way they used to make movies all the time and even to this day is as disappointed with scenes like the Cantina scene . It's a good thing however that Lucas began his work in this era before he had the chance to lose his mind with CG .

Also, what was the fourth documentary SciFi showed?

Amazing how they created such believeable effects back then. Today's CGI effects all look unrealistic, corny and overcrowded. The special effects of the original Star Wars films remain, to this day, unsurpassed in their attention to detail, good taste and suspension of disbelief.

It is an edit of the original. The 1980 version (sitting on an older deteriorating tape) included scenes from "The Black Hole." Those shots were removed for this 1996 sci-fi channel rebroadcast — used to gin up support for the special editions. I guesss Disney saw no benefit to them.
"Revenge of the Jedi," as stated by Mark Hamill during this, was the original title. So, they must have done this little skit before they changed it.
