Android generally renders screen elements in terms of "dp"s, density-independent pixels. dps are 1:1 with px on 160dpi, and scale accordingly depending on the device's reported dpi, with lower dpi values generating fewer pixels per dp, higher dpi values vice-versa.
Android sees the G2X as a 320dp x 533dp screen. Changing the dpi to 190 changes that to 404dp x 674dp, so in order to scale to the same physical size, everything is drawn about 20% smaller.

Developers can include graphics that are drawn depending on a wide variety of conditions about the device, though most commonly the device dpi. Currently, Android natively supports low dpi (120), medium dpi (160) and high dpi (240), so whenever the dpi is set to a different value, it chooses the closest drawable and scales it up or down appropriately.
Changing the Android device dpi can increase your decrease your "virtual" screen resolution, but of course doesn't actually modify the number of pixels on the display.
It's similar to running an LCD screen at the wrong resolution. Things generally look a bit "off" unless you're using the appropriate resolution for the screen size and dpi.
I honestly don't know of any free apps that let you edit framework. There may well be one out there, not saying there aren't. I just don't know of any personally.
Hmmm... where can you find the manufacture date? When I go into 'about phone', under 'Baseband Version' there is a date (March 27, 2011)... would that be it? If not, where do I look?
I'm running 'Go Launcher EX' instead of the stock launcher and I don't see any ill effects. However going back to the stock launcher and opening the app drawer, I can see what you mean. They look a bit blurry or something. Like I said in the video, you can choose 200, 220 or any other number that might make things look better to you.
I did this and nothing changed on my G2x.
