1)use your stop kicks,groin kicks,legs kicks to keep him at bay while inflicting damage/pain on him until you can find opening to strike his neck/eyes/nose with POWER PUNCHES, then disarm him.
of course if he grab you, you WILL get stabbed/slashed, but if you POP HIM GOOD WITH ALL YOUR MIGHT IN HIS THROAT...HE IS DEAD.
NEVER UNDERESTIMATE THE EFFECTIVENESS OF STRIKING VITAL AREAS.
@chrisgrinhard No offence guys, but how about PHYSICALLY experimenting with tactics before concluding what works and what doesn't? Get yourself a blunt plastic knife (sharkee are good) - not rubber because it bends and not aluminium because it's too hard. Get some eye protection for the 'defender' and some headgear for the knife attacker... then just go for it. All-out, full force. You'll find what works, real quick :) Check out my vid 'experiment 1' and read the description. Happy training!

a 10 inch knife is scary, but I'd go for his vitals and strike to kill and barrage him until he stops breathing, not giveing him any time to recuperate between my kicking his groin,fingering his eyes, grabbing his arm(arm holding knife), punching his throat REPEATEDLY FULL FORCE.
@chrisgrinhard thats stupid, i just carry around my own knife...an i have a katana under my back seat....i also dont leave the house unless i have two phonebooks straped around my chest...
I don't think ignoring the knife holding arm and instead trying to punch or kick the attacker is a possible or sensible thing to do. No matter how much damage or pain you can inflict on the attcker, the attacker will inflict more fatal damage on you in return with his knife. So first thing first you will be left with no choice but to disarm that knife first by defending yourself against it. In fact, defending yourself from the knife is a challenge in itself let alone disarming that weapon.

What a terrifying video at 1:44! the attacker is a cold-blooded killer. Too bad the guy behind the counter did not react to pull out his gun when the attack was imminent, but at the same time, good call on shooting the bastard.
Well, as you can probably see from the footage, trying to catch the arm or block the stab/slash would be near impossible. Considering that all defences can be penetrated if put under enough offensive pressure, it would be wiser to focus on attacking the attacker instead. To become completely focussed on causing enough damage to him that his own offensive capability is diminished completely - aiming to cause the maximum amount of damage in the shortest amount of time.
No problem mate. It's great for giving an example, but nothing beats putting the headgear on and getting the training knife out to really learn what works and what doesn't (so long as your training partner is *really* going for it).

THE RULE OF THUMB, STAY AWAY FROM THE ATTACKER AND KEEP THAT DISTANCE. ONCE HE GRABS YOU IT IS GAME OVER. IN OTHER WORDS, RUN.

yup, and since most deaths by knife attacks take about 10/80 stabs you have a good chance of making it out alive.
keep distance and try and defend your main blood vessels, the neck legs and stumach.
carefull about the lungs too!
