if you play counter-strike source, you'll see the "hud" where the numbers are. it tells you ammo, health, armor, and time left in round, etc. the hud is normally yellow. a "gui" is a "graphic user interface" which is the hud and a few other things essentially. competitive leagues such as CAL come out with their own, and the color as you can see in the vid, is customizable + some other features for competitive play. sv_pure is a server setting required by competitive leagues to ensure fair play.
