"Nun" would be written with two letters in hirogana, "NU" which is pronounces like new and is shaped like the letter ME (pronounced may) but has a little loop at the end of it. The second letter would be "nn" which is kindof shaped like an "H." The two combined create the sound "noon." The sunday school nun or none can not be pronounced using Japanese characters, the closest you get is nan or non. Please learn to read Romaji.

They were all students of Hanshi Frank van Lenten (may he rest in peace), who not only spent seven years living and training in Okinawa, he also spoke the language fluently.

I had never heard him actually say "nunchaku," however I always assumed that his students would pass on the non-anglicized pronounciation.
