(aside from seasoning) I TOTALLY forgot that I needed a Pressure Cooker ( Brazilians usually use that) and Didn't know what to do; all other recipes were slow cooker made.. So This helped me alot! @Repobrain I'm sure crockpot works just fine and dandy, but I don't see crockpot being used on Chopped and Iron chef tv shows..hehehe....Sometimes it's just great to just cook with a pan at times...but using crockpot does work great!

The wine will have a sharper more pungent taste and flavor if added near the end. If you want the wine to be a little more mellow add a little bit before thickening with flour. Any amount of heat is going to evaporate any minute amounts of alcohol.

It's not Jamaican because... this recipe is not Jamaican. Actually not American-style but more old England.... the original recipe more than likely originated in Europe since Cattle (Oxen) are not native to any islands on the planet. Seasonings in many tropical areas were added because the meat is less than fresh. Over time these became accepted ways to flavor local dishes.

There is actually no seasoning added. You just caramelize the meat and add the vegetables as shown in the video. When you think about it this old recipe could be easily made by everything at the farm without any spices other than a little salt

This looks like a good recipe BUT I would recommend using at least one crushed clove of garlic added at the vegetable stage. Also, as the big man says, red wine works well with the broth. However, a nice twist is is to use cider or pale ale as the base for the sauce, with some tomato paste/puree at the same time for colour and thickness. The alcohol cooks away and you are left with a fantastic rich, thick gravy containing the fat from the meat. DELICIOUS!
I use to cook this in a pressure cooker, let it cool way down then scoop off all the fat that floated to the surface. In any case, thanks for letting us know that the ox-tail we buy is actually cow tail. Lots of people didn't know this.
It's important to understand the word OX in OxTail stands for Oxen. Oxen simply means the steer its a trained and of at least four years of age. These would usually be working animals to pull something like a Ox cart. It's not a breed or something you can go down to the store and buy... So oxtail simply means beef tail of any breed.
Interesting, it's not the same as the Chinese way of making it either. Instead of flour we use cornstarch among other things. But I've heard that arrowroot is a better sauce thickener than flour or cornstarch.
Hope you've never eaten a real sausage that's encased in intestines. Chitlins perhaps. Liver removes all the bad things from the animal's system then we eat it. Pigs waller in mud and poo all day. Cows and chickens are horribly messy. Fish swim in their own pee and poo. Bees spit up honey. Plants get bird crap and bug poo on them. So get used to it.
What you need to do is season the oxtails with (scotch bonnet)pepper, salt, onions, garlic, pimento(aka alspice), escallions, browning(aka mollasses or melted sugar), paprika and thyme. let the seasoning soak in for half hour then take the oxtails out of the seasoning and brown them without adding flour. then u re-add the seasoning and water to cover the meat. let it cook until the meat is tender(u can use a pressure cooker for speed) then add pre-cooked lima beans. cook for a bit then serve!

yes I think you can use cornstarch... just add less then the flour amout and stir in a little before adding any more.
