  • WONDERFUL!!!! Perfect oxtails

  • Nice video! It would really be cool if you could do a video using the crockpot to make this dish. Just a thought...

  • those oxtails was cooked perfect, thanks for the video...

  • i never tried ox, lmfao

  • thanks man,i made it and it was awesome!

  • Thanks ... its really good !

  • I really enjoyed your video. I am going to try it exactly how you made because you made it look sooooo good! Thanks...Chef!

  • Thanks this was great video, def. Going to cook using this recipe, Great

  • looking good.. it take too long though

  • 2 things missing...1 tbsp..Kitchen Bouquet when cooking off the flour to give it a lil more color...and some cooked white rice!....but other than that?....*pass!*

  • Thanks for the recipe. I'm going to brown the veggies to get more fond, and browned bits to add. otherwise, im making it like you do.

  • Thank you SOOO Much! I just bought some Oxtail.. wanted to make something different for my family. My Mom always did Oxtail & Potatoes when I was little. You did it JUST like Brazilians do it. (aside from seasoning) I TOTALLY forgot that I needed a Pressure Cooker ( Brazilians usually use that) and Didn't know what to do; all other recipes were slow cooker made.. So This helped me alot! Thank you!

  • I stole your reciepe & my family LOVES IT! thanks repobrain!

  • great tutorial - just followed it myself and the results were great.

    many thanks mate.

  • Excellent recipee..it looks amazing and I will try it myself thank you for posting it

  • Interesting way of making stew...always made my stews with slow cooker...

  • --maplepoon-- Actually you could just caramelized the meat in the pan and then transfer it to be crock pot (slow cooker). This would capture some of the flavors that browning the meat prior to stealing gives off. It really adds to the richness of the flavor. Glad you found it interesting

  • @Repobrain I'm sure crockpot works just fine and dandy, but I don't see crockpot being used on Chopped and Iron chef tv shows..hehehe....Sometimes it's just great to just cook with a pan at times...but using crockpot does work great!

  • Gotta cook it this weekend! Looks so yum yum!

  • is chicken broth and chicken stock the same thing?

  • @ItsKnucklez Yes as far as I know..... But you can use Beef broth/stock I just did not have any at the time

  • @ItsKnucklez ..Im a culinary student...no they are not the same broth is made with only meat stock has meat and bones

  • Excellent tutorial. thanks. I like the part about thickening and adding the flour. Very helpful.

  • i'm going to try this in my croc pot since i never pay attention to cooking for long periods of time. I'm wondering if i can use cornstarch to thicken it?

  • yes I think you can use cornstarch... just add less then the flour amout and stir in a little before adding any more.

  • Looks good. you can also thicken with cornstarch and water mixture.

  • I must apologise for my comment that i made i dont know what i was thinking

  • Nice demonstration

  • that was grea!

  • ahhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhhh

  • Why not use beef broth instead of chicken?

  • Other than the fact I didn't have any beef at the time.... beef broth is actually better and obviously gives a nice flavor. The interesting thing with the chicken stock being such a light flavor when you caramelized meat is pretty difficult to tell whether it was beef or chicken stock

  • thats what im cooking right now , huum is good

  • Have never tried this but think I will now....Thanks!

  • its d bleakest darkest winter here and all i want to consume a bowl of this stuff bring a little sunshine into my heart.

  • well done

  • I just found out about Oxtail stew and OMG!! it's the best part of the cow!.. we cooked them for 5 hrs in a cast iron pot on a woodstove.. this stuff is to die for!

  • A real master chef.

  • Mark do I add in the wine while its cooking or near the end after I thicken it out with the flour,? what do you suggest. ? also can this dish be put over rice, have you ever tried it that way ?

  • The wine will have a sharper more pungent taste and flavor if added near the end. If you want the wine to be a little more mellow add a little bit before thickening with flour. Any amount of heat is going to evaporate any minute amounts of alcohol.

  • peter griffin got skills! sweet!

  • Indubitably

  • Nice job

  • Hey Mark, I tried out your recipe and it was just great! To add more nutrition and flavour, I also included other ingredients (garlic, tomatoes, button mushrooms, red wine & bay leaf). Loved it!

  • Thanks... sounds even better !

  • That is great idea. This is making me hungry. I will try this definitely.

  • Hey Repobrain, I tried your recipe but modified slightly by adding other ingredients (garlic, tomatoes, button mushrooms, red wine & bay leaf) to add more flavour. It turned out really well! Check out my blog if you're interested to see my pictures =)

  • Looks really good. I'd add more spices, though.

  • Can you use beef stock or red wine?

  • Beef stock would be better I just didn't have any at the time. You can certainly add a little red wine... which will enhance its flavor.

  • this is not jamaican at all! that was terrible to me and it was done completely american-style. you didnt out any seasoning on the meat, thats flavorless!

  • It's not Jamaican because... this recipe is not Jamaican. Actually not American-style but more old England.... the original recipe more than likely originated in Europe since Cattle (Oxen) are not native to any islands on the planet. Seasonings in many tropical areas were added because the meat is less than fresh. Over time these became accepted ways to flavor local dishes.

  • like jamaican oxtail better with hot habaneros peppers and thyme

  • thats the smallest whisk ive ever seen. lol should have browned the veggies, before adding.

  • This looks soooooo good! I am extremely hungry!

  • Looks almost as good as my Louisiana momma's stew, except she had a tomato gravy, and served over rice.

  • Nice but kinda odd he's eating it by itself...no rice & peas? Great video buddy! Make some more videos. Thanks for posting!

Where do I buy Oxtail in Holland/ Netherlands? I wish I could grow my oxen in my backyard! LOL!

  • jaMAICAN ME HUNGRY!!!

  • Thank you so much for the video. I absoluely LOVE oxtails. I actually just tried it for the first time about 3 months ago, and I'm in love with it lol. Your video was very simple, informative, and easy to understand :)

  • Mark, ure the best! I LOVE oxtails and my best friend used to make em all the time, shes jamaican. shes back in jamaica now and i know the seasoning she uses, but i was missing the technique and here i have it. thanks sooo much!! will definitely be making this this week!

  • Glad this helped ! Mark

  • @kcl060 What seasoning?

  • There is actually no seasoning added. You just caramelize the meat and add the vegetables as shown in the video. When you think about it this old recipe could be easily made by everything at the farm without any spices other than a little salt

  • add chicken what? oxtail stew is delicious, omg wish i could eat that it looks delicious am getting hungry, love meat

  • Very much like my own yummy recipe which I do in a slow cooker. Thanks for the tip about how to thicken the gravy without it going all lumpy!! Super video - easy to follow.

  • Thanks !!

  • Nice tongs!!!

  • OX tail is really really delicious!

  • yes it is, am getting hungry looking at this

  • Different looks good though

  • Love it,i m gonna be cooking oxtail tomorrow.

  • This looks like a good recipe BUT I would recommend using at least one crushed clove of garlic added at the vegetable stage. Also, as the big man says, red wine works well with the broth. However, a nice twist is is to use cider or pale ale as the base for the sauce, with some tomato paste/puree at the same time for colour and thickness. The alcohol cooks away and you are left with a fantastic rich, thick gravy containing the fat from the meat. DELICIOUS!

  • Thanks .... I'm hungry

  • Wow. It looks really yummy. I will try it. Thank you for sharing.

  • I recently started using broth instead of water and it does make the gravy tastle better.

  • very good love it

  • Watched this while I was making oxtail stew in my slow cooker. Yum! Great vid. Thanks for sharing.

  • I use to cook this in a pressure cooker, let it cool way down then scoop off all the fat that floated to the surface. In any case, thanks for letting us know that the ox-tail we buy is actually cow tail. Lots of people didn't know this.

  • You had me sitting watching this video and only at the end you tell me that it isnt really oxtails!?!?!

  • Ox is another word for cattle

  • It's important to understand the word OX in OxTail stands for Oxen. Oxen simply means the steer its a trained and of at least four years of age. These would usually be working animals to pull something like a Ox cart. It's not a breed or something you can go down to the store and buy... So oxtail simply means beef tail of any breed.

  • That is what I said, cause it can also mean dairy cattle too.

  • i think i am going to try this.

  • I love oxtails! esp. the way jamaicans make them! yummy!

  • Interesting, it's not the same as the Chinese way of making it either. Instead of flour we use cornstarch among other things. But I've heard that arrowroot is a better sauce thickener than flour or cornstarch.

  • yummmmmmmmmmmm! one of the foods to eat before you die

  • You guys eat tails? Do you know it has been on the asshole for years?

  • Hope you've never eaten a real sausage that's encased in intestines. Chitlins perhaps. Liver removes all the bad things from the animal's system then we eat it. Pigs waller in mud and poo all day. Cows and chickens are horribly messy. Fish swim in their own pee and poo. Bees spit up honey. Plants get bird crap and bug poo on them. So get used to it.

  • Both of your comments makes sense. Lol

  • good video

  • Looks very good!...I like the step by step directions you gave....will be making this!THANKS

  • What you need to do is season the oxtails with (scotch bonnet)pepper, salt, onions, garlic, pimento(aka alspice), escallions, browning(aka mollasses or melted sugar), paprika and thyme. let the seasoning soak in for half hour then take the oxtails out of the seasoning and brown them without adding flour. then u re-add the seasoning and water to cover the meat. let it cook until the meat is tender(u can use a pressure cooker for speed) then add pre-cooked lima beans. cook for a bit then serve!

  • MAY I go to your house for dinner lol.Thats how you cook some ox tails with a whole lot of love.Your pot sure has a whole lot of Yum Yums in it. Good job Trelli28

  • weird recipe for oxtail. That is definately not how us Jamaicans cook them.

  • thanx looks so easy

  • he shouldn't have put the flower in there.

  • I think you meant to say flour not flower. If you don't put in flour then you're going to get soup not stew

  • nice..i am hungry now..i love eating ox tail and i sometimes cook it as well personally i like eating red wine ox tail stew..its really nice with some tomato's and red wine and tomato paste and some bay leaf....and other vegs...and i love it....haha i hope you can make a video about this dish..it would be nice to see if you can make one, since i like watching your cooking videos!!!haha thanks!!

  • hey..thanks man..that was a gr8 video, easy step by step..just what i needed...and a gr8 recipe... :)
