I'm doing a science project on that. What's happening is the water is just waiting for something to trigger its nucleacion. It's a subject called "supercooling". It's like the droplets in the sky. If you ever watched Iron man the movie, in that scene where he freezes in the air, that's basically what's happening here.
Water to freesze usually need a what is acalled a freezing nucleus and the water will solidify from that point outwards, nuclei could be imperfections in the water, this is why for this experiment to work you need distilled water prefferably cause in this case there is insufficient nuclei and the water reaches temps as low as -40 and still retains its liquid form, the reason being in a simple explanation, that the molecular structure of it needs to re-shuffle for it to solidify,
I can tell you that without a doubt...that's simply distilled water. Ive performed the experiment myself...The water is just super cooled. The solution itself requires a slight activation energy to initiate freezing without the inclusion of additional particles (ie..the distillation process)
Are you saying all bottle water contains sodium acetate? I know that it could produce a near identical effect without the wait but, in this case it's only super-cooled water.

supercool? are u serious? there's no such thing, u either freeze the water or u dont. what, freeze it and over freeze it again? I just left a bottle in the fridge for one week once, still it didnt have that effect. It's a chemical one, and u have to do shit to it .
Depends on the freezer and the size of the bottle. Usually takes about five or six hours to get to the right temp. So, overnight would be close to freezing on it's own. Fun at parties!

So are you supposed to leave a bottle of water for like a day before you tap on it or just put it in the freezer for a few hours then tap on it?
