  • Hi, I tried ur way to cook bengan ka bharta... taste was really nice... but wanted to know in detail the temperature u put the egg plant in oven and also the time...( Be specific to oven please as i dnt have microwave at home )

  • @dishadoshi20 : It is cooked in the oven and not in the microwave and the temperature and the timings are there in the video. Pl. watch the video once again.

  • Hey Hetal n Anuja....Jus wanted to let u guys know i tried this out today and it was sooooo yumm...btw i am someone who has never eaten eggplant in my life b4.My hubby likes this dish that is y i gave it a try..i dont have an oven so chopped it & put it in the microwave.Your aloo meethi & doodhi kofta is also made by almost every week.Wil surely check out your other recipes as well...jus wanted to say THANK YOU,U guys are doing a great job :-) :-)

    Yes, that is the traditional method of roasting eggplant. Be careful though, it can get messy.

  • I boil the baingan whole till it's very soft and falling apart. I mash it with a fork, skin and all. Then I start frying the onions ( lots! ), add the masala, salt, tomatoes and green chillies, fry a bit and add the mashed baingan. Now the best and hard part. Fry all together, constantly stirring and mixing it.

    That's how I observed it being done by my friend long ago, and that's how I like it!

    oil....onion.....tomato.....gi­nger....garlic....green chillies...then dry spices......finally the main ingredient......in this case egg plant.......if add boiled potato to it....what would you call it....."bombay potato"

    Is it the standard method of cooking Indian food!!!

  • If you are not anti microwaves, just put the eggplant in a microwave for 8 minutes...the skin will peel right off too.

  • @ndufcat : Do you cut it or put it whole? If you put the whole one, hope you puncture the skin a bit in case it bursts...

  • @ShowMeTheCurry You just put it whole without puncturing. I saw this method under Manjula's Baingan Bhurta right here on you tube (and it did not burst).

  • @ndufcat : It has happened to my sister (and it was a BIG mess) :( - that is why I was asking. I have chopped it and done it in the MW just to save some time but have found that the flavor does get compromised. It is definitely a time saver :)

  • @ShowMeTheCurry Oh well, perhaps she did puncture it and forgot to fill the viewers in. If taste is compromised then defintately the oven is the way to go. I would however have other things going in the oven because a single eggplant in the oven for one hour seems like a waste of energy. Thanks for the input and lovely recipies! :)

  • hi hetal and anuja... my oven is pretty dysfunctional... I can't rely on it... Therefore, can i coat the baingan with oil and fry it on a tava/fan instead? would that help? if yes, for how long and at what heat level? plz help...

  • Some people actually hold the baingan over a flame to char the outside. It can be done, however, it may be a little messy. If you cook it on a tawa, it somehow does not pick up the nice roasted flavor.

  • This looks good. What other vegetables do you recommend besides peas? I have encountered a dish with eggplant and lentils before, and it was like a bhurta dal. I wanted to try roasted peppers or yellow squash. What do you think?

  • I have a reques to make.

    Instead of mentioning 1 medium onions and 4 med tomatoes , can you specify the measurement in terms of how many cups tomatoes / onion etc. "Medium" onion for me can be very different compared to someone else and adding too much onion can ruin the taste . Just a request. I hope you can oblige next time.

  • Thanks for your feedback. We try to avoid using cups for measuring onions and tomatoes because depending on how they are chopped, more or less will "fit" into a cup. We have the option of weighing, but many people do not have a kitchen scale.

  • Hi Hetal & Anuja,

    I have a question for you. Your recipe calls for 2 tsp on Corriander powdr and 1 tsp of Cumin powder.

    I have a spice called DhanaJeeru which is a mixture of Corriander + Cumin powder. Can I use Dhanajeeru instead ? However, I am not sure what is the ratio of Corriander : Cumin in the spice.

    Please advice.

  • Dhana Jeeru is a very Gujarati blend of spices. Somehow, many of the other states do not keep the 2 spices combined :).  Usually, dhana jeeru is 2 parts coriander and 1 part cumin, so you'd be safe to use it in this recipe.

  • nice to try something i usually make myself but without using any spices just some onion,roasted garlic,green chillies and some fresh cilantro. u should try it

  • We got our pan from Bed Bath & Beyond. You can also find it at Linen n Things - although better hurry since it's about to go out of business.

  • Do you have to poke hole into the eggplant before you put it into the oven?

  • No need to poke holes because all the juices will leak out. Lightly coat with oil and bake.

    you will need onion,green chili,salt,mastard oil &coriander leaves.

    the way you cooked the brinjal in oven is ok,after peeling off the skin you need to put it in microwave oven in high temp for 3 min...........by then you chop onion(1/2),green chili(1 or 2),coriander leaves finely.mix all these with 2 teaspoon of mastard oil &salt.then mix the roasted brinjal with the ingrediants

If you have some personal issues, then deal with them. There's no need for lude comments. There are many of us who appreciate these videos.

    In-fact Brinjal or Egg-Plant as it is referred here is originally from Southern-India and from there it spread to other parts of the world.

  • don't be angry my friend, different countries use different words for the same things, egg plant is what the Americans call the Brinjal simply because it is shaped like an egg, another example in case being the "ladyfinger" (=bhindi) is called "okra" in the US (because Okra is the spanish name for this vegetable).
