The one behind the bar was meant to put it back down in the script, Del Boy was meant to just lean back on it. But it was so funny, they used that take, legend
Oh behave, the whole thing was scripted - the barman was supposed to be in the background, almost so you wouldn't see what he was doing, and there was a crash mat on the floor too. Totally intentional, still funny though.

I have loved David Jason since the early 70's and "Edgar Briggs", for his amazing stunt work and comic timing.This is his most well known example.
