Great program! "Dizi" (named for the pot it is served in) was always called "abgusht" (water and meat ) when I lived in Iran. The Tabrizi are supposed to make the best abgusht, and my mother in law used to live next to a woman from Tabriz whose abgusht would smell so delicious, the neighbors would come over for a taste. She used tomatoes, chick peas, potatoes, turmeric, dried lemons, onions, and lamb (and plenty of fat). I still make it once a month at least!
