Apostrophes are used to show POSSESSION, and are NEVER used to pluralize!
Therefore, it SHOULD be "GREEKS" - not "GREEK'S."
PRO-TIP: "It" is the exception to this rule - the possessive form of "it" is "its." In this case, the apostrophe is ONLY used when contracting "it is" - thus "it's."
