Yup. This is what I used to do before my current setup. I stil play cajon with my hands for the flamenco gigs, but for the pop and rock gigs, I needed to free up my hands to play the rest of the set, so I employ a modified double kick pedal to play the cajon with my right foot--as a kick drum. I use a soprano snare in the kit to get the necessary snare sound with drumsticks.
