Well all the soft power down and sleep actions are disabled, but there are a few ways to get around this.
For one, you can hold the power button down for 4 seconds which does a hard power down. Another is plugging in headphones which disabled the speakers. And another is restarting the X server using the key combination
It's not a perfect solution, but I am making an assumption that who ever tries to steal my laptop doesn't know these
you would just remove the battary.

nope, the volume control keys are disabled when the gnome screensaver/lock is running.
Although the thief can plug in headphones which would disable the PC speakers

They can just remove the batteries while the laptop is running.
