  • @ac2and4 Firstly, it's spelled pizza napoletana not "napolitano". Also, the claim that there isn't cheese on pizza napoletana is absolute bunk.  Only pizza marinara is cheese-free and is less common than pizza margherita which always has fresh mozzerela. Both are varieties of pizza napoletana. As well, seafood would be a very unusual topping for pizza napoletana. The Associazione Verace Pizza Napoletana has a strict set of definitions on their web site for what qualifies as pizza napoletana.

  • pizza has to baked in ovens constructed for it! directly on marble or granit slab and the heat be like that of a furnis. Pizza napoletana consists of diluted concentrate of tomato paste,black olives,oregano,anchovies and a little garlic drizzled with extra virgin olive oil.

  • I don't know why everyone is so surprised by Gino de Gaylord's lack of authenticity. The man is a jobbing chancer without even the most basic food safety certificates, let alone any professional training. Look at him making it all up as he goes along just to be on telly.

  • This is not a pizza napoletana.

    Tips for better results:

    1.Take less yeast (only a little!), but give the dough more time to repose

    2.Yeast and salt should never get into direct contact

    3.take the highest temperature you can achieve on your oven

    (a professional pizza is baked at about 450 degrees!)

    4.Don't put the mozzarella directly on the pizza - it will burn while the dough will still be soft. Put it after ca. two-thirds of the baking time

    5.don't be rude like him, do it with love!
