The myth is that mushrooms will absorb a lot of water if you wash/rinse them. I remember reading a test in Cook's Illustrated and they showed that this wasn't true.
Great tips Keith. I wash my whole mushrooms under cold water and then pat them dry with paper towels before cooking.
