Use shallots instead of onions. Add vegetables at the beginning with shallots and garlic. Use low sodium broth or make your own otherwise the end result is too salty. Match the broth with what you're making. Vegetable for vegetables, meat for meat, and seafood for seafood. Never add cheese to seafood risotto.

Only in the US is it pronounced 'H'erb. It is like a Canadian or British person spelling the word "color" with a "u" : colour. It all depends on one's influence and or culinary background.
