@loqiloqi no, if you watch carefully, he only starts the doubling process after 1:32. Before that, he's just working the dough so it won't break when he doubles it. The repeated stretching and twisting aligns the long-chain proteins in the flour. By my count, he does 7 doublings, so that's 128 strands.
@zubhanwc3 You're forgetting that the final "doubling" isn't actually a doubling--it's just folded in half, so unless you cut the bottom, it's still 128.
