@clicheisticSPAZZ Lots of specialty food stores, ESP those dealing with small batches of hand made items, do not usually wear gloves, but instead keep their hands clean by washing in between jobs or every few minutes or so as is required by the Health Department. Gloves for the most part make it difficult to do any fine detail work and for the most part will only see them in large production areas. If more then one person is handling the product before it is finished, then yes you need gloves.

@lilaDragonfly If there is more then one person handling the product then they have to wear gloves. But if he is making it from start to finish, then no. He is only required to keep his hands clean by washing every 30 minutes or so as required by the health department. Besides, gloves (unless they're the extremely thin latex ones, are so hindering when you work on things like bread, chocolate, or cakes that it becomes more of a problem then a help.

dont worry about using glows! This is chocolate, and glows and chocolate dont mix very vell :P Besides, if he has a good hygiene its actually better to just use hands. Glows tend to have more bacteria on them after a while.
