Think everyone should educate them selfs on what fats are good and what are bad, you cant just ignore fat its something we need to live and even helps burn fat.

@Faust2320 what "STUFF" is fattening? Excess calories makes you fat....elevated insulin can make you fat....hyrdogenated-transfats or saturated oils can make you fat...none of that represents this meal. olive oil is pure health. The egg yolk is healthy again: betacarotene, choline, HDL (good cholesterol), more protein....
@blasaug no: not frying - sauteing, in a small amount of HEALTHY olive oil....big difference...no hydrogenated trans-fats are produced in this process. Good question
@paulioj101 its not frying it's sauteing - there is a difference: very little oil is used & olive oil is a healthy unsaturated fat. Sauteing preserves the texture, flavor in nutrients. Frying uses way more oil, and deep-frying does convert oils into unhealthy hydrogenated-oils known as trans-fats. Great question!
@paulioj101 sweet-potatos or yams would indeed pack even more healthy nutrients into this recipe, but then, it would no longer be a 'Spanish' omlette:) ,...but it would be very tasty I bet!
